“Zoodles” are the perfect gluten-free pasta!!
What you need:
- 2 zucchinis
- 90 g fresh basil
- 80 g cashew nuts
- 3 garlic gloves
- 40 g pine nuts
- 140 g cherry tomatoes
- 100 g pees
- 2 tablespoons fresh lemon juice
- 3 tablespoons olive oil
- Pinch of sea salt
To make the pesto, put the cashew nuts in some water for about 1-2 hours. That way they become a softer so that you can mix them better.
Then, roast the pine nuts and cashew nuts in a pan for 1-2 minutes so that they can develop their full flavour.
Mix the cashew nuts, pine nuts, garlic gloves, fresh basil leaves, fresh lemon juice, olive oil and sea salt until you get a smooth texture. Ready is the basil pesto!
To make the zucchini noodles, also called “zoodles” you will need a spiralizer to get the desired pasta form. You can eat the zucchini noodles raw or you can cook them for about 4 minutes in a pan together with a little bit of olive oil.
Put some olive oil in a pan and add the cherry tomatoes and pees. Let them cook for about 3 minutes. Now, add the pesto, tomatoes and pees to the zucchini noodles and enjoy!
