Summer rolls

What you need:

  • 100g pea or thin rice noodles
  • 8 large organic rice paper sheets
  • A few salad leaves, sliced
  • 100g cabbage, tiny sliced
  • 3 carrots, tiny sliced
  • 1 cucumber, tiny sliced
  • 1 mango, tiny sliced
  • 2 avocados, tiny sliced
  • A few leaved fresh mint
  • A few leaves fresh basil or Thai basil
  • 2 tablespoons black sesame seeds for garnish

For the sauce:

  • 2 tablespoons pure peanut butter
  • 1 tablespoon coconut aminos
  • 1 1/2 tablespoons sesame oil
  • 1 garlic glove or one teaspoon garlic powder
  • 1 teaspoon grated ginger
  • 1 teaspoon fresh lime juice
  • 3 tablespoons filtered water
  • 1 tablespoon maple syrup

Directions:

Cook the pea or rice noodles according to the instructions on their packaging Place some warm water into a bowl and put one rice paper after another in it for about 1 min Place the ingredients you like in it and roll the rice paper For the sauce put all of the ingredients together and mix it.
