What you need:
For the sweet potato croquettes:
- large sweet potatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary
For the guacamole:
- 2 large avocados
- 3 garlic gloves
- 1/2 lemon juice
- Pinch of sea salt
- 100 g cherry tomatoes, cut in small pieces
For the salad:
- 1 lettuce
- 100g cherry tomatoes
- 50 g pomegranates
- 1 tablespoon olive oil
- 1/2 tablespoon coconut aminos
- 1/2 lemon, juice
Directions:
Preheat oven to 200 degree Celsius Peel and steam the sweet potatoes for about 15 minutes Let them cool down before you grate them. Mix them together with the dried thyme, oregano and rosemary Take a small amount of the wet potato mass and form small croquettes Place them on a baking sheet lined with parchment paper and bake them for about 40 minutes until browned For the guacamole, mix the avocados together with the minced garlic gloves, fresh lemon juice, cherry tomatoes and sea salt until you get a smooth texture Make the salad and for the dressing mix the olive oil, coconut aminos and fresh lemon juice.
